I usually associate tagines with African cuisine, but I understand there are some Indian dishes that are cooked this way. Is it a widely used method of cooking in India or do you only see it in certain places?
As far as I know, tagines are a specialty in Morocco, North Africa. It normally involves cooking meat (any kind of meat) with vegetables and gravy. I have never heard of similar dishes in India.
